EZ Chicken Stew

EZ Crockpot Chicken Stew, Anyone Can Do!

This is one of my favorite meals to make when I’m short on time. I’m not going to call it a recipe, more like a guideline. Every time I make it, it’s different. But always good. I use whatever I have on hand. Beef could be substituted for chicken. Peas for corn. Potatoes for rice. Chili powder and cumin for the Tyme and Celery seed. You get the picture. Don’t be afraid to mix it up! It’s quick, it’s easy and it’s all good! Just throw all the ingredients in the crockpot, set on low and go to work or to the mall or hang out with your kids. At the end of the day, you will have an awesome meal!

Here is my most recent concoction:

  • 2 cans of chicken broth
  • water
  • 1 cup of chopped, cooked chicken
  • 1 cup of left over rice
  • 1/2 cup of dried lentils
  • 1 cup of leftover corn
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 1 medium onion, chopped
  • 1 tbs chopped garlic
  • 1 ts Rosemary
  • 1 ts Tyme
  • 1 ts Celery seed
  • 1 ts Sage
  • 2 Basil Balls or fresh basil

** To thicken, add a can of Cream of Mushroom soup

AND anything else you feel like throwing in. The amount of each item can be modified based on what you have on hand and the size of your crockpot.

TIP: I now use Basmati Rice, as it has a very good flavor AND more importantly, has a very low-glycimic effect, in other words it does not have much affect on your blood sugar. (a good thing for non-diabetics and diabetics alike)

Directions:
Place all ingredients in the crockpot. Stir it up. Add water to fill. I usually set it to high while I’m preparing the ingredients or while I’m getting ready for work. When I’m done, I set it to low. Cook at least 8 hours. Total prep time 25 minutes. Although, I have done it faster, when in a hurry! :)

TIP: IF you don’t have chicken broth, boil the chicken in 4 cups of water, with a little tyme and sage. Bring to boil for 5 minutes, simmer for 20 minutes. This can be done while you are chopping veggies.

Meal Planning Idea

  • Cook Rice as a side for dinner on Saturday.
  • Cook chicken and corn (or green beans) for dinner Sunday.
  • This will give you the main ingredients to make your stew on Monday.

    I seriously recommend buying a crockpot! It is one of the best things we have ever purchased for our kitchen. It is REALLY nice to come home from work and dinner is already DONE! I can’t praise it enough! Kneel to the almighty crockpot…well, okay, that’s a little over the top. :)

    That looks delicious. I make vegetable soup in my crockpot all the time and do the same thing you do, just put whatever I have on hand in it. And it always comes out delicious. I will have to try this recipe too. I have also found a recipe for port loin stew. I think I am going to try that on Tues.

    Thanks Marg! I actually used to post recipes fairly frequently, I just haven’t had the urge recently. I post what ever pops in my head! I have been making a variation of this dish for the past several Mondays, using the weekends leftovers. Makes Monday nights a breeze! So it was fresh…

    Momma always told me variety is the spice of life…consider EZGreatLife like the Sonny and Cher show, without Sonny and Cher…or a TV…or a huge audience. Maybe not… I know I’m going against the grain of conventional blogging “wisdom” by not focusing on a specif topic or niche…BUT, oh well! Hopefully, I will continue to come up with things people will be interested in and want to read about. OR it might just be me and you kid…OR just me. Damn…I must go now and focus like a laser on SOMETHING. Not. Have a great day! :)

    You know, I need to get me one of these here crock pots! I keep hearing people rave on about them and all the incredible things you can cook in them. Sounds like my way of doing things: set it and forget it. Come back later, and ‘voila!’.

    Crockpots are the best! It’s about the easiest way to make a really great meal. It’s so exciting to come home from work and smell dinner that’s already made.

    Hi John,
    Thanks for sharing your guideline with us. This is the type of food I enjoy eating. We do have some crockpots and my husband uses them all the time. I do like how tender the meat gets, while cooking for hours. I like to boil my chicken. Chicken is one of my favorite meats and this is a healthy way to cook it.     I love my crockpot and now that I have a pressure cooker I love that two. This looks really good and perfect for spring when a little lighter fare is desired but still want something hot. Tell me more about basmati rice and why it is different.

    Basmati rice is used in many Indian dishes. I’m not very good at describing flavors, BUT, compared to say regular white rice, Basmati is very flavorful and has a very distinct smell. Say you had a Dorito and a plain unsalted potato chip. The Basmati would be the Dorito! :) However, I don’t think you will find any Dorito flavored Basmati rice…not yet anyway… :)

    The other great thing about Basmati is that is has a very low glycemic effect…it does not cause a spike in glucose levels in your blood. Before I found out about my diabetes, I never thought about my blood sugar. Since being diagnosed, I have found out that EVERYONE should be concerned with their blood sugar…in fact, not worrying about it is how some non-diabetics become diabetic.

    Plain white rice is one of the worst things one can eat from a blood sugar point of view… Trader Joe’s carries a brown Basmati rice which is very tasty! :) But, both the white and brown basmati have a low glycemic effect.

    And that’s all I have to say about rice… :)

    I think crockpots are called “slow cookers” here if I have it correct. It does sound good! Hope this comes up in the first few serps for you – you’ll have traffic forever to this article and you’ll love this meal even more :)

    I just love chicken soup, especially if it has carrots and all the other spices. It’s simply mouth watering and even good for a cold. Nothing like home made soup to snap you right back to health.

    I’ll try this recipe with brown Japanese rice and see how it goes. My girlfriend’s aunt plants rice here and every harvest we get a 20-pound gift. :-)
