Delicious Low-Fat Spinach Lasagna

Delicious Low-Fat Spinach Lasagna

Here is a delicious low-fat spinach lasagna recipe I have been serving up for years. Serve with a garden salad, fresh veggie and garlic toast. It’s oh so good!

INGREDIENTS
16 oz low fat cottage cheese
16 oz bag shredded Mozzarella
1/2 cup grated Parmesan Cheese
1 jar spaghetti sauce
1 15 oz can of chopped tomatoes (or 2 cups of fresh tomatoes)
1 Basil Ball or fresh basil
9 whole grain lasagna noodles
10 oz frozen chopped spinach (thawed)
1 tbs. minced garlic
1 small onion, minced

DIRECTIONS

  1. Cook lasagna noodles according to directions. Rinse in cold water. Set aside.
  2. Combine 1/2 package of mozzarella cheese, cottage cheese, 1/2 of the Parmesan cheese, spinach, garlic, and onion. Set aside.
  3. Combine spaghetti sauce, tomatoes and basil ball in a sauce pan and heat on med-low, stirring occasionally until it begins to boil. Set aside.
  4. In a 9×13 inch baking dish cover the bottom with sauce. Place 3 lasagna noodles on the sauce, covering with more sauce.
  5. Spread half of the spinach and cheese mixture over sauce.
  6. Add another 3 lasagna strips, cover with sauce. Spread remaining spinach and cheese mixture.
  7. Add the last 3 lasagna strips and cover with remaining sauce.
  8. Preheat oven to 350. Cover with aluminum foil and bake for one hour.
  9. Uncover and top with remaining Parmesan cheese and Mozzarella cheese during last 15 minutes of baking.
  10. Allow to sit 5-10 minutes before serving. Serves 8.

So there you have it! A quick and easy low-fat meal! Enjoy!

    Mmmmm. I love lasagne but I usually make mine with meat. My Mum used to make ratatouille lasagne and that was quite nice. However, never tried it with spinach. I will have to give this a try.

    I’m kind of excited -
    Craig & I loaded up on bags of fresh spinach last time we shopped …
    Because they were so low priced.
    Anyhow … now a few days later … we’re a little sick of spinach salad!
    I’m going to substitute fresh for frozen in the recipe!!
    Craig & our 21 yr old son Cody will be really happy -
    (They love heartier meals … especially w/cheese.)
