
Is it just me or is anyone else bothered by the fact that we can’t enjoy one family holiday without the next one in line being shoved down our throats? Every year the holiday merchandise is rolled out earlier and earlier. Of course this is not a new development, it’s been going on for some time. But it sure seems that retailers have stepped up the pace in the last few years. It’s as if they are in a race to see who can irritate consumers the most. AND I for one am irritated!

I hope you were able to spend time with friends and family today. We just returned from my Mothers. We had a huge family gathering. Dinner was awesome. Tomorrow my wife and I are having my Dad over for dinner along with both my sisters and their families. Turkeyday all over again! Hope you had a great Thanksgiving.

Here is a delicious low-fat spinach lasagna recipe I have been serving up for years. Serve with a garden salad, fresh veggie and garlic toast. It’s oh so good!

INGREDIENTS
16 oz low fat cottage cheese
16 oz bag shredded Mozzarella
1/2 cup grated Parmesan Cheese
1 jar spaghetti sauce
1 15 oz can of chopped tomatoes (or 2 cups of fresh tomatoes)
1 Basil Ball or fresh basil
9 whole grain lasagna noodles
10 oz frozen chopped spinach (thawed)
1 tbs. minced garlic
1 small onion, minced
DIRECTIONS
- Cook lasagna noodles according to directions. Rinse in cold water. Set aside.
- Combine 1/2 package of mozzarella cheese, cottage cheese, 1/2 of the Parmesan cheese, spinach, garlic, and onion. Set aside.
- Combine spaghetti sauce, tomatoes and basil ball in a sauce pan and heat on med-low, stirring occasionally until it begins to boil. Set aside.
- In a 9×13 inch baking dish cover the bottom with sauce. Place 3 lasagna noodles on the sauce, covering with more sauce.
- Spread half of the spinach and cheese mixture over sauce.
- Add another 3 lasagna strips, cover with sauce. Spread remaining spinach and cheese mixture.
- Add the last 3 lasagna strips and cover with remaining sauce.
- Preheat oven to 350. Cover with aluminum foil and bake for one hour.
- Uncover and top with remaining Parmesan cheese and Mozzarella cheese during last 15 minutes of baking.
- Allow to sit 5-10 minutes before serving. Serves 8.
So there you have it! A quick and easy low-fat meal! Enjoy!

Well actually, EVERYONE, the time is now. If you have been paying attention to the U.S. stock market, you know the last couple of weeks have been brutal. Nasty. Ugly. Insert your descriptive word here. The DOW dropped another 445 points today or about 5.5%. Add that to the 427 point drop yesterday and we are sitting at 7552.29. I am approaching a 50% loss in my retirement funds. Seventeen years of savings. Is the carnage over? Who knows? But, I do know this. I couldn’t be happier. I’m continuing to invest. This is a buying opportunity baby!

Frustrated parents in Nebraska are abandoning their children at local hospitals. Yes, you read that correctly. Little Johnny didn’t eat his peas? Sassy Marie, mouthing off? Lazy Mickey not taking out the trash? Fear not, just anonymously abandon them at the nearest hospital. That’s it, like dropping off your clothes at the cleaners. Free from prosecution. Smells of bad government gone crazy, again.

So today I’m at work and my cell rings. I look and it’s my daughter. That’s strange, I thought, it was only 11:30AM. Then I remembered she was out of school today. I answered and listened to my panicked daughter tell me she had just been in an accident. “Are you OK? Is everyone OK? What happened?”, I nervously asked. As it turned out, she had rear-ended the truck in front of her. This after a third car had cut across three lanes and made a right-hand turn, at 35 MPH, in front of that truck. He nailed the breaks and my daughter slammed into him. The driver of the car took off. A sort of hit and run.

Sometimes it’s hard to stay focused on your goals. You may even fall off the wagon every once in a while. I know. It’s happened to me more than once! Well it’s finally over. The people have spoken. Now it’s time to move on and work together to get out of this mess our country is facing. John McCain gave a graceful concession speech, urging his supporters to join him in congratulating President-Elect Obama. He went on to say that he will do everything in his power to help him lead our country through the many challenges we face. We ARE facing extraordinary problems on multiple fronts and our elected officials need to work together for the good of the country. Bravo Senator McCain!
