Taking a camping trip is a great way to do some family bonding and get in touch with nature. It is very relaxing and can be a lot of fun. There are all kinds of activities that can be enjoyed or you can simply do nothing at all. It’s totally up to you.

I went camping this past weekend and noticed a significant jump in gasoline prices. I paid $3.89 per gallon, for the first time ever. It was $3.69 just last week. I see $4.00 per gallon in the very near future. And unfortunately I think we may see $5.00 per gallon this summer. Long term it could go much higher.

Here is a delicious low-fat dish that is great for summer time cook outs and get togethers. I have listed some veggies that you can use, however feel free to add or subtract what ever you like. For years I have been harassed by my family for always having that !#%! camcorder with me where ever I go. When I show up, family members begin ducking for cover. My Grandmother, bless her heart, usually starts with “Oh no, not that thing again! Go take some pictures of the young people. You don’t want pictures of this old lady.” Well actually, yes I do. That’s exactly what I want. I have been documenting our family with the camcorder since 1995. Just about every birthday party, holiday and get together is stored on dozens of tapes, hundreds of hours of video.

Just in case you’re wondering, you can thank Anna Marie Jarvis (1864-1948) for all her hard work and effort to establish Mothers Day as a National Holiday. Anna worked tirelessly for this cause following the death of her mother on May 9, 1905. President Woodrow Wilson signed the proclamation designating the Second Sunday in May as “Mothers Day” on May 14, 1914.
And, yes, those flowers were picked fresh this morning in my backyard, by yours truly, for your virtual viewing pleasure!
