Jenn - I'm glad you can try this one! I plan on doing plenty of veggie recipes this summer once my garden gets going! I used to cook with olive oil all the time, but have been watching it lately. Cooking spray actually works pretty well. We have had an organic vegetable garden for years, but last year we tried growing some herbs. We had the biggest basil "bush" you have ever seen! My wife made "basil balls" and froze them. We put them in everything! We have two left, so I hope my basil is ready soon! I will give instructions on making basil balls once I have some fresh basil. Thanks for reading and commenting, you always add value to the conversation!

Now this is a recipe I can make! I actually have made a similar recipe, but with olive oil, squash, onions, green peppers and broccoli. However, I need to start using cooking spray. Thanks for the recipe.

By the way, hopefully, you can use all fresh ingredients once your garden is producing. Fresh garlic, basil...etc is much better and healthier.

Jenny - I will be adding more squash recipes just as soon as I get my first batch from the garden. I can't stand buying it from the grocery store!
