
We grow yellow squash in our garden every year. This is one of our favorite summer side dishes. It is quick and easy. I was at the grocery store today and saw the “baby” yellow squash and just couldn’t resist. As summer approaches, I will be sharing many more squash recipes. Stay tuned.
INGREDIENTS
4 to 5 small yellow squash
1 medium onion, chopped
1 ts oregano
1 ts basil
garlic powder
non-stick cooking spray
DIRECTIONS
1. Slice squash very thin into quarter sized pieces.
2. Spray frying pan generously with non-stick spray.
3. Saute onion until tender. Add squash, garlic, oregano & basil.
4. Stir and toss until tender and crisp.
5. Add salt and pepper to taste. Serve immediately.
This is a great side dish or could be eaten all by itself for my vegetarian friends! It is naturally low in fat and calories and high in vitamins. Instead of oregano and basil, you could substitute celantro. Make sure you serve it right away or the squash will become mushy. Enjoy!

Jenny – I will be adding more squash recipes just as soon as I get my first batch from the garden. I can’t stand buying it from the grocery store!

Now this is a recipe I can make! I actually have made a similar recipe, but with olive oil, squash, onions, green peppers and broccoli. However, I need to start using cooking spray. Thanks for the recipe.
By the way, hopefully, you can use all fresh ingredients once your garden is producing. Fresh garlic, basil…etc is much better and healthier.

Jenn – I’m glad you can try this one! I plan on doing plenty of veggie recipes this summer once my garden gets going! I used to cook with olive oil all the time, but have been watching it lately. Cooking spray actually works pretty well. We have had an organic vegetable garden for years, but last year we tried growing some herbs. We had the biggest basil “bush” you have ever seen! My wife made “basil balls” and froze them. We put them in everything! We have two left, so I hope my basil is ready soon! I will give instructions on making basil balls once I have some fresh basil.
