Sauteed Squash and Onions

We grow yellow squash in our garden every year. This is one of our favorite summer side dishes. It is quick and easy. I was at the grocery store today and saw the “baby” yellow squash and just couldn’t resist. As summer approaches, I will be sharing many more squash recipes. Stay tuned.

 Our vegetable garden

Last weekend my wife and I planned to work on our yard. We made a list of everything we wanted to accomplish. After getting up early Saturday morning, we spent the day working our tails off! With the help of our daughter and my mother in law, we made some serious progress.

Smothered Steak!

I started cooking this one when we were on the Adkins Diet. Remember that one? The only difference here is that I used to use Ribeye Steak. But since Ribeye has 25 grams of fat per 3oz, YES that’s over 133 grams of fat for a 16oz steak, I now use Sirloin. Sirloin has 8 grams of fat per 4oz (32oz for a 16oz steak). Much better!

How To Save $25,480.00

Up until about seven years ago, we would eat out 2-3 times a week, on average. You would typically find our family dining out Friday, Saturday and Sunday. Occasionally we would venture out during the week as well. Not only did this have a negative impact on our health, but it had an equally adverse effect on our wallet.

My wife and I celebrated our anniversary Saturday night. We had planned this evening for months. Reservations, invitations and finally we had our night! We chose to have our small family gathering at Steinhilber’s, a 65 year old family owned establishment. If you ever make it to VA Beach, you should check out this hidden gem! I HIGHLY recommend it!

Tax Deadline April 15th

It’s that time of year again. Tax time! Yuck! Raise your hand if you hate doing your taxes! John *raises hand* =) I will spend tomorrow doing our taxes. I started getting everything together about a month ago, but stopped when I realized we are not getting any refund this year. So I haven’t exactly rushed to get it done! I usually have it planned fairly close, so we get a small refund. But not this year!

Weight Loss 

Alright! So here it is. My big announcement. I weighed in Monday morning and behold! I finally hit the big 25! That’s twenty-five pounds! Gone. Vanished. Disappeared. Elvis has left the building! Or at least 25 pounds of Elvis. =) I waited until today to tell you because I wanted to make sure I would maintain the loss, which I have, all week. I’m actually down 28 pounds as of this morning. But who’s counting? Ahhhh, I am!!!
